CHOCOLATE MUFFIN (CACAOWEB)
2 eggs
1 cup (200 g) sugar
1 cup (130 g) all-purpose flour (I added 4 tablespoons more)
6 tablespoons unsweetened cocoa powder (I reduced to only 2 tablespoons)
2 teaspoons baking powder
1 teaspoon vanilla essence
2/3 cup (160 ml) milk
2/3 cup (160 g) butter - melted
4 oz (120 g) semisweet chocolate chips (optional)
White chocolate rice ~ to sprinkle
Method :
1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
2. Grease 6 large muffin tins or cups (paper muffin bake cups are recommended).
3. Beat the eggs with sugar, mix with flour, cocoa powder, baking powder, vanilla and milk
4. Fold in the melted butter.
5. Add chocolate chips (please note that these might end up in the bottom of the muffin).
6. Bake at 350 degrees until a until a wooden pick inserted in center comes out clean , approximately 30 minutes.
The Chocolate Muffins may be served hot or at room temperature.
***For me, I prefer to sprinkle the chocolate chips on top of the batter before baking. If I mix with the batter, the chips will sink.
***I used vegetable oil. Vegetable oil less fat than butter!
*** I beat the eggs untill the color pales.

Ham Cheese Mushroom Chicken Burger

For The Patties:
2-3 thin slices ham finely chopped
2-3 thin slices cheese finely chopped
a little canned mushroom (about the same quantity) finely chopped
4 pinches powder
a little pepper, fresh ground is bettera little salt, less or none if the ham is salty
1 hand fresh bread crumbs
1 egg lightly whisked
1 quarter chicken stock block dissolved in a quarter cup water
For the Rolls:
4 rolls
sliced tomato
thinly sliced onion
lettuce
a few slices of gherkin
mayonnaise
Instuctions :
Mix all the patty ingredients thoroughly, leaving the salt for after the patties are cooked if you prefer.
Make sure the mixture is cool.
Divide mixture into 4 equal balls and mold into patties.
Cook on low heat under the grill, on the barbecue or in a pan until cooked through or the internal temperature reaches 175F/80C
Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in pan) just before the patties are done.
Spread a little mayonnaise on the bottom halves, add a thin slice of onion, some lettuce, a slice of tomato and a little sliced gherkin.
Top it off with a little mayo, the patty and the top half of the roll.

1 dash lemon juice
4 pinches paprika powder
2 pinches dried oreganoa little pepper, fresh ground is bettera little salt1 hand fresh bread crumbs1 egg lightly whisked
1 quarter chicken stock block dissolved in a quarter cup water
For the Rolls:
4 rollss
sliced tomatothinly sliced onion
